Menu Plan

Madeline was sick most of the week, so some of our food plans (including date night) were put on hold. Turns out she had a double ear infection, Roseola, and cutting 4 teeth. The combined result was lots of fevers, crankiness, and one sleepy girl.

We're on Spring Break now, so hopefully she'll get better and we'll be in for a fun week with friends. We also have plans to get asparagus, rhubarb, sugar snap peas, and 2 blueberry bushes in the ground.

Here are our food plans for the week. What are yours?
  • Sunday: Mexican Green Salad with Grilled Lime Turkey Breast
  • Monday: Grilled Veggie Pizza (weather permitting)
  • Tuesday: leftovers
  • Wednesday: Vegetable Lo Mein
  • Thursday: Rosemary Lemon Chicken Kebabs and Grilled Red Potatoes
  • Friday: Date Night (Macaroni Grill gift card)
  • Saturday: Fettuccini Alfredo, Italian Green Salad

This week's sweet treat: White Chocolate Lemon Pudding.

  1. Monday-Grilled eggplant, zucchini, roasted red peppers, on grilled french bread. A little crostini action:)
    Tues-Salmon with roasted red potatoes
    Wed-Buttermilk whole wheat waffles with strawberries
    Thursday-Veggie quesidillas
    Friday-Probably eat out
    Saturday-Homemade pizza

  2. Hi Katie!
    I was inspired by the warm weather, so I made grilled rosemary lemon chicken for lunch today. I let the chicken sit in the lemon rosemary mixture for 25 minutes and it kept the chicken very moist and delivered tons of flavor. You are in for a treat with your kabobs! I also grilled asparagus, red and green bell peppers and potatoes. The sunshine must causing us to think alike. Allison ;)

    Tuesday - Cooking class
    Wednesday - Moosewood Navajo Stew (with sweet potatoes)
    Thursday - Sardine sandwiches and a salad
    Friday - Dinner with Family
    Saturday - Not sure yet, but the fettucine alfredo and / or pizza sound pretty darn good
