It's going to be a fun, but busy week here! Eric will be on a work trip for a couple days and I'm guest writing daily for Happy to be at Home's Kitchen of the Week feature. Follow me over for double the goodLife {eats} fun. Logan is back in school on Monday after being on Spring Break since March 18th! I plan to take advantage of having a few hours of simpler time again. A couple recipes from last week's menu are making another appearance this week. Last week hubby and I had a couple nights where we just weren't that hungry and didn't fuss with a big meal. Here's our menu for the coming week:
- Sunday: Chicken Pot Pie with Buttermilk Biscuit Crust
- Monday: Vegetable Lo Mein
- Tuesday: Leftovers
- Wednesday: Fettuccine Alfredo and Italian Green Salad
- Thursday: Tex-Mex Beef enchiladas and Avocado and Tomato Salad
- Friday: Date Night!
- Saturday: Homemade Pepperoni Pizza, Tossed Salad with Ranch
This week's sweet treat: A few weeks ago I had some delicious Pistachio Gelato sold at Sunflower Farmer's Market. We went back for more and it was gone, gone, GONE. Three weeks solid and no sign of it. They still had other flavors from the same brand. So? This week, we'll be making some ourselves!
