Menu Plan

We have another busy week ahead of us because we're planning for a trip to visit Grandma and Grandpa in Seattle. We scored a great deal on tickets when Southwest had their Mystery City Sale 50% off travel to and from a mystery city each day. One of the days the mystery city was Albuquerque, our home airport!

Here is our menu for the week. We didn't end up having the fajitas last week, so we'll be having them tonight. The flank steak is already soaking up the marinade.
  • Sunday: Pasta with fresh tomatoes, basil and mozzarella
  • Monday - Flank Steak Fajitas (didn't end up having last week)
  • Tuesday: Creamy Tarragon Chicken Salad and watermelon
  • Wednesday: Leftovers
  • Thursday: Chile (from the freezer) with assorted toppings and tortilla chips for dipping
  • Friday: Pizza Night! Homemade
  • Saturday: Cook from the fridge/pantry day or eat up any leftovers to prepare for travel
This week's sweet treat: I really want to make Doughmesstic's Dreamsicle Macaroons that I didn't have a chance to make last week. I hope I have time! Last week I ended up making the Pistachio Gelato I've talked about, as well as some yummy Strawberry Swirl Brownies with some strawberries that needed using up.

  1. Great looking menu! Have fun on your trip! And I love your giveaway!! My dad is visiting this week so we will probably have a lot of family dinners, not sure what though!

  3. I must be really hungry this morning - because now I want dinner food after reading your menu! LOL it all sounds WONDERFUL!! - I just posted an easy lemon cake recipe!!

    oh, and check my recipe box for my flank steak sandwiches!! - it's in my families top 5 favs- we had them again last night!

  4. Oh, all of that sounds so delicious! We just got a new grill so I am excited to start grilling out this year and flank steak is something we will have to try. Thanks for the ideas!
