Getting back into Meal Planning

It's going to be another busy week, but this time I've got a plan to help me out with that! I don't know how I made it through last week without a meal plan. It's so much easier for me to at least have a list of things I'd like to make and work them into the week depending on the day's activities.

We're heading out next weekend to visit family, so I'm going to use up the groceries I've got and incorporate them into some yummy meals. I had a laugh earlier that I won't need to put laundry away in the traditional sense this week. Instead it will go from dryer to suitcase.

I'm planing to get together with Maria while I'm in her neck of the woods. She and I could do some serious damage in the kitchen, in the best way possible! And hopefully we'll catch Julie and Julia (also, I'm going to be the featured blog of the day on the official website August 7th).

I've been eyeing these Glazed Lemon Cakes, so I think that will be our sweet treats for the week. If I have time, I'd also like to make this recipe for homemade granola to snack on for our road trip.

    Monday-Leftover veggie pasta salad and watermelon
    Tuesday-Grilled veggie fajitas
    Wed-whole wheat waffles/berries
    Thursday-Grilled salmon/veggies
    Friday-Homemade pizza night
    Sat-church party

  4. Good for you for planning the menu for the week! Hope your trip goes well. Here is my week:
    Monday - "Surprise #7" (it's a recipe from my mom, an inexpensive mix of ground beef, rice, tomatoes, onions, garlic, and beans, with chili powder and spices) with Baked Zucchini
    Tuesday - Leftovers enchiladas
    Wednesday - Breaded Chicken Breast with Tomato Salsa and Mozzarella, with Sweet Potato Fries and Broccoli
    Thursday - Cheese-stuffed chicken breast wrapped in bacon, with veg & rice stuffed peppers
    Friday - leftovers
    Saturday - homemade pizza birthday party!
