Feta Month Round-Up

It's been a great month experimenting with feta in new recipes and hearing all about what you like to use feta for best. I hope you've enjoyed the chance at the giveaways every Friday! Some of my top highlights from the past month:

It was great to go out of my routine and try feta with a fruit in this Watermelon, Mint and Feta Salad with Balsamic Syrup.

It's easy to dress some plain green beans up with this fun recipe for Green Beans with Tomatoes and Feta. It was so pretty and colorful too!

This No-Bake Grilled Vegetable Lasagna with Feta is one of my new favorite recipes. So simple and a great way to enjoy a fall favorite during the summer.

I loved this take on the Strawberry Salad that I ate while in Scottsdale on the Thermador trip. Instead of goat cheese, I used feta.

And of course, I enjoyed some of our old favorites too. Like these Black Bean Breakfast Burritos with Feta and this Quinoa Taco Salad. Feta is a great substitute for queso fresco in Mexican food.

Trying Fattoush for the first time. I have the photo in the collage for this post, but I haven't had a chance to post the recipe yet. Really yummy! What is Fattoush?

I got my recipes organized with my Magazine Recipe Binder. I even added a section for feta recipes and included these new articles on feta and Greek food from Real Simple and Food & Wine.

Making these Muffins that Taste Like Donuts. Ok, that had nothing to do with feta. But they were definitely one of my highlights this month!

  3. Try this: Slices of watermelon (remove rind), topped with crumbled Feta, thinly sliced Vidalia onion, sliced pitted Kalamata olives, pistcchio nuts, and drizzled with a lime juice/fresh chopped mint/olive oil vinaigrette. It's AMAZING!
